- Cook Pasta:
Bring a large pot of salted water to a boil. Add penne and cook according to package directions until al dente. Drain and set aside. - Make the Sauce Base:
In the same pot, pour in both cans of minestrone soup and the can of diced tomatoes (with liquid). Stir to combine and bring to a simmer over medium heat. - Add Beans and Seasoning:
Stir in the drained kidney beans and sprinkle in the Italian herb packet. Let simmer for 5–7 minutes, stirring occasionally, to blend the flavors. - Combine with Pasta:
Add the cooked penne back into the pot. Stir well to coat the pasta in the hearty soup mixture.
(If it’s too thick, add a little water or broth until desired consistency.) - Optional Fresh Add-Ons:
- Stir in spinach or kale and cook 2–3 minutes until wilted.
- Drizzle with olive oil and top with parmesan and herbs for extra flavor.
- Serve Warm:
Ladle into bowls and enjoy a comforting, fiber-rich pasta dish that tastes homemade and wholesome.
